I kind of feel there are quite some people not eager to sign up (no idea why .. maybe they think is cumbersome or need recommendation / verification / approval, like on Heroes) but eager to watch a publicly shared match link where they want to see one of their favourite players playing a certain match (maybe is a final of an important tournament or so). So, I'm thinking if would be a good idea to allow people without an actual account registered with Backgammon Hub to watch online matches played here on Hub ?

This is done. There is no special page - you can just share the regular match link 🎉.
There is also a dedicated "live matches" page linked from the homepage (path "/live") which shows all current matches (similar to "Play Now" panel).

There is that error message when a guest watcher tries to type in. Instead, maybe it should display: "Warning: this feature is allowed only if logged in !" (or that chat field to not be clickable if you are not logged in) ?

I really like this idea but it's complicated... at the moment match state changes are sent to "watchers" and a watcher is a connection with a name and so on. In fact so many features of the site rely on being logged in.
It would probably be relatively simple to create a dedicated "watch match" page which doesn't require login and has limited functionality, but am not sure how useful this would be. A direct link would be needed to the match every time.

PS: when I play a final of a tournament, I distribute the direct match link publicly and I mention that to actually watch the match people need to have an account (or register one) and be logged in their account to actually watch the match. I think this approach would attract more spectators if there would be no requirement to actually own an account in order to watch that certain shared match link.
